The market is bustling with punters and overly enthusiastic street sellers, while flags and adverts flap above my head. The heat combines with the aroma of exotic snacks being conjured up by the side of the road, coating the air with a delicious haze. Where the haze subsides, splashes of colour seep through from locals passing by in traditional clothing.
In the distance, women in large sun hats float by on long-tail boats laden with rainbows of fruit, veg and flowers meticulously arranged before them.

I decide to stop for a bite to eat. I sit on a small stool and I am handed a Thai green curry with tofu, aubergine, babycorn, mangetout, edamame beans, courgette and jasmine rice. The vegetables are so fresh that they look and taste like they were picked a few hours ago. The curry is so light and flavoursome, that a perfect balance of spices is achieved. It is deliciously hot, topped with fresh red chillies. The rice is well cooked, not too hard or too soft. Together they epitomise everything I love about Thai cooking; fresh ingredients, balanced spices, fragrant and beautiful dishes.
